So, last Sunday I did my first vegan cake stall at a hardcore show (Have Heart). I’ve been thinking about doing this for a while bu treally didn’t like the idea of making money from my cooking as it’s something I like doing for people. I decided I’d charge a £1 a cake but give all the profits to The Art house cafe, an amazing local volunteer run cafe that I think really deserves support.
I baked cakes from 8am – 4.30pm and just ignored the fact the kitchen was so hot the icing was melting everywhere and my poor house mate wasn’t allowed in the kitchen to make lunch.. I arrived at the venue 30 min early to set up and that’s when the fear really set in..I’d never cooked for strangers before and never charged money for it!! What if they didn’t like them??? I’d spent ages perfecting these recipes!!! People started flooding in and soon the 100 odd capacity venue was rammed. STILL no one had bought a cake though. Thoughts of having a week of lunch boxes full of cakes sprang into my head. Then, slowly, one by one the people came and bought and I held my breath to see if they immediately spat out the cake…Luckily I didn’t see this and the cakes kept selling like..er..well, like hot cakes. In the end I sold every cake (except the trifle- bad idea!), handed out 100 vegan recipe sheets and raised £37 for the Art house. It felt really good to see people eat cake and be surprised that it still tastes great without dairy in! So, if anyone needs a cake stall at their show or needs bands feeding for no profit just let me know!
Vegan Double chocolate chip muffins
When I first became vegan I used to make this recipe all the time as it gave me a massive chocolate rush when I didn’t like eating dark chocolate on its own and was pining for milk chocolate! I’m pretty sure it’s from a vegan cooking book but I have no idea which one as it was years ago and I now have ALOT of cook books, sorry!
This recipe makes 8 BIG muffins.
What you need:
2 cups of self raising flour
¼ cup cocoa powder
¼ cup soft brown sugar
½ tsp of salt
Approx. 150g chocolate chips/ chocolate bar smashed into bits
4 tbsp vegetable oil (NOT OLIVE!)
300ml coconut cream or coconut milk or 50g creamed coconut in 300ml boiling water (COOLED)
What you do:
1.Preheat the oven to 170 degrees C and place 8 muffin cases into a metal muffin tray
2.Stir together all the dry ingredients including the chocolate
3.Pour in the oil and the coconut and mix
4.Spoon the mixture into the muffin cases until the mixture goes over the top slightly (the mixtures pretty thick so
it’s easy to pile!)
5.Cook for 15 min and check that the tops are firm.
6.Scoff once cool or as soon as you can shovel them in your mouth without causing pain!
