Vegan Cupcakes

Ingredients

Base:

1 ½ cups of self raising flour
¼ tsp salt
¾ cup sugar
¾ cup soya milk
2 tsp vanilla essence
¼ cup vegetable oil (NOT OLIVE!)
Egg replacer for 1 egg
Paper/ silicon cake cases

Icing:

½ cup Trex (vegetable fat!)
½ cup margarine
3 ½ cups icing sugar
¼ cup soya milk
1 ½ tsp vanilla essence
3-4 drops of food colouring of your choice (or a
flavour if you prefer!)
Sprinkles/ chocolate flakes for decoration
Icing pipe
Hand mixer

What you do:

cupcakes-insert21.Pre heat the oven to 170?C.

2.Mix together the flour, egg replacer, salt and sugar into a large bowl.

3.Pour in the milk, vanilla, oil and any extra water for the egg replacer and stir until just mixed.

4.Pour into cake cases and cook for about 10-15 min until they are golden and springy to the touch.

5.Leave to cool COMPLETELY!

6.Pour all the icing ingredients into a bowl and blend using a hand mixer until fully blended and thick (add a few more drops of food colouring if the colours not bright enough or add colour at the end if you want cakes with more than one colour!)

7.Spoon into an icing pipe and cover your cakes in a spiral pattern.

8.Decorate with sprinkles/ grated chocolate and tell your teeth to brace themselves!
