Zine symposium vegan chocolate orange cake

This week I’ve been freezing my bits off in Berlin! I had a rad time mostly because of all the German Christmas markets and all the AMAZING vegan food places! If you’re heading out there look up the following munch places: Yo yos, Yellow sunshine, Tiki bar, Dolores, Goodies and Cupcake bakery. I needed 2 seats on the way home!

I got this recipe years ago at the first zine symposium from Natalie and it’s the greatest recipe ever! I’ve managed to lose the icing part of it so I made up this one so it’s partly in grams and partly in cups just to add to your washing up! Oranges are mega cheap at the moment and smell all festive so get baking!

What you need:

· 275g Self raising flour
· 50g Cocoa powder
· 1 tsp bicarb of soda
· 225g sugar (white or light brown is fine)
· 250 ml vegetable oil (NOT olive!)
· 150ml cold water
· 4 oranges
· 1 ½ tsp vanilla essence

· 50g chocolate chips/ broken up chocolate bar
· ½ cup margarine
· 1 tsp vanilla essence
· 2 ½ cups icing sugar
· 2-3 tbsp soya milk

What you do:

1. Pre-heat the oven to 160oC and grease up 2 matching cake pans.

2. Using the fine side of your grater, grate off all the orange rinds (you need 4 tbsp).

3. Cut the oranges in half and squeeze out all their juice into a cup (you need 150 ml)

4. Put all the cake ingredients into a big bowl with the 150ml orange juice you’ve just squeezed and 3 tbsp orange rind. (Keep the other 1 tbsp for the icing!)

5. Mix well with a hand mixer or a strong arm.

6. Pour into your cake pans and pop in the oven for 30mins (check the middle is springy not wet!)

7. After 10 mins, take the cakes out of their pans and leave to cool on a rack.

8. To make the icing, melt the chocolate chips in the microwave or in a glass bowl over a saucepan filled with boiling water.

9. Mix in the margarine once the chocolates cooled a little.

10. Add in the other ingredients including the orange rind.

11. Mix like hell! If it’s a little dry/ thick add a little more soya milk.

12. ONLY when your cakes are COMPLETELY cool, spread the icing over both halves.

13. Stick them together and use the rest of the icing to cover the sides.

14. Leave the icing to set for about 10mins then EAT!!!
